Portuguese Pork and Clams Picadinho

Tender pork tenderloin trimmed to mouth-size pieces, sautéed in extra virgin olive oil, garlic, bay leaf, hot Spanish paprika and little neck clams in a succulent meat and cilantro clam broth, sautéed garlic marinated shrimp. Gently poured over oven baked fresh herb bite sized red and Yukon gold potatoes. Yum! Close your eyes and imagine the aroma and taste.

Neapolitan Meatballs- Polpette alla Napoletana

Meatballs are magic. If you're Italian, you'll probably eat these without gravy/sauce!

These have the tendency to magically disappear...you just can't eat just one!

Roasted Cornish Game Hen

Lemon and rosemary marinated cornish game hen stuffed with shiitake mushrooms and sultry black pepper-encrusted bacon. Finished with a browned thyme and sage butter.

The Mosaic Chef's Classic Parmesan Cutlets

Parmesan chicken cutlets crusted with homemade garlic and herb breadcrumbs. Great for a nibble, lunch or dinner. For dinner, I love to top them with fresh arugula, garlic and tomato bruschetta with a dash of minced red onion and a touch of red pepper flakes.

Enchiladas Bravas

Hand-rolled enchiladas with roasted Pasilla chili, three cheeses and tequila braised chicken. Topped with cilantro and mint tomatillo sauce.

Not your ordinary enchilada! It's vibrant & smokey. Your pallet will love this one.

Roasted Thai Ginger Garlic Red Chili Chilled Chicken

Fresh shaved ginger and garlic splinters infused beneath skin with a Thai red chili sauce rub. Just enough to give that little tingle on your tongue and a little lovin' to your taste buds.

Diced andouille sausage spiced with The Mosaic Chef's own cajun seasoning. Gently diced heirloom tomatoes, fresh sweet clams, pink shrimp, and black sea bass completes this culinary mosaic of flavor nirvana.

Seafood Ciopino

Mussels, shrimp, clams, halibut, scallops, fresh herbs, fennel, delicately diced heirloom tomatoes together in a flavor-packed tomato broth.

Lemon Shrimp Capri

An explosion of citrus and garlic!

Portuguese Style Shrimp in Garlic Sauce

Garlic garlic garlic touch of hot Spanish Paprika (and don't forget the Piri Piri!).

 You can't eat just one of these sautéed jewels!

Seafood Paella

Fragrant yellow saffron rice combined with black mussels, littleneck gray clams, purple and white baby squid, snow white calamari rings, pink shrimp, fresh cut field green parsley, sweet young juicy green peas and deep orange/red tomatoes sautéed.  By combining the flavors, they all accent each other into a symphony of mosaic aromas and color. A true taste sensation.

The best part is on the bottom of the pan. Crunch = compact explosion of flavor!

Kaffir Lime Salmon

Fresh salmon, dusted with candied chipotle chili powder and topped with a kaffir lime leaf-infused browned butter sauce.

You'll love this layering of flavors.

Scallops on Herb-Infused Polenta

Florida lobster, sautéed in coconut, cilantro, cinnamon, fresh sweet corn and sweet vidalia dice.

Peasant Pasta

Baby Ditalini pasta, gently tossed with sautéed garlic, extra virgin olive oil, diced carrots, garbanzo beans, shallot, young sweet baby green peas and topped lightly with the earthy taste of white truffle oil. So simple yet so good!

Sometimes I'll put a little finely minced bacon or pancetta into the mix.

Grilled Shrimp & Eggplant Pad Thai Noodle Summer Bowl

Red chili spiced shrimp, grilled bite size charred eggplant and rice noodles are kissed by silky pad Thai crema.

Roasted Eggplant Gorgonzola Ravioli

Roasted eggplant and oven-baked pecan and gorgonzola stuffed ravioli, sautéed in garlic and fresh basil browned butter.

Tagliatelle

Tagliatelle with wild mushrooms, sweet baby peas, burst of cherry tomatoes, fresh sweet corn on the cob and prosciutto in a luscious pecorino Romano besciamella.

Three creamy cheeses, two pastas and one sweet buttery lobster topped with homemade baked herbed breadcrumbs.

It's my supercharged kids meal!! Happy days are here again.

Yes! Paella without seafood chicken or meat... sunshine-charged goodness!

Eggplant Parmigiana

Thin sliced eggplant, breaded with homemade herb toasted bread crumbs sautéed till browned and almost crispy. Layered with 6 cheeses and my own special marinara sauce, then oven baked to marry all flavors to perfection.

Stuffed Portobello Mushroom

Portobello mushroom layered with ratatouille, fresh basil mint pesto and mascarpone cheese, topped with fresh mozzarella.

Butternut Squash Orzo
